The Domaine Vouette et Sorbée is run by Bertrand Gautherot, a récoltant manipulator of Buxières-sur-Arce, in the Côte des Bar. The five hectares of land stand on a ground that has very similar characteristics to Chablis, made of Kimmeridian marl. The vines are mainly cultivated with pinot black and have an average age of 21 years. The land is entirely conducted according to organic farming criteria and since 1998 the company possesses Demeter certification. Harvesting is always manual and vinification takes place in oak barrels with indigenous yeasts of the same grapes. Finally, the champagne breaks are done as in the past, "à la volée", and without any addition of dosage liquor. The range includes the "Fidèle" cuvées made from pinot black in purity, "Blanc d'Argile" from chardonnay in purity and "Saignée de Sorbée", black pinot rosé.
