Zyme Kairos 2020
The label shows the relationship of Kairos to the Harlequin project: Harlequin's costume is composed of many colours of 15 different grapes, each with its characteristics. In ancient Greek, Kairos means "opportune, at the right moment". The addition of the sundial and the clock expresses the exact ideal time.

Colour

Brilliant, dense ruby red, with garnet touches as it ages. Dense, with a high-content of glycerine.

Bouquet

A mixture of fruit, blossoms, and minerality, alternating with each other.

Flavour

Rich and structured. Fruit, spices, and higher alcohols alternate with fruit jam and forest floor flavours, together with pipe tobacco, cinnamon, nutmeg and clove. The minerality enhances the flavours of this wine, with persistent sweetness.

Pairing

Elaborate meat dishes with robust and spicy sauces; excellent with aged and flavoured cheeses and game.

Origin From Zýmē vineyards in Verona and Vicenza (Veneto).
Soil composition Alluvial, volcanic or glacial according to the location of the vineyard.
Harvest Manual harvest based on the ripeness level of each vine variety with a careful quality selection. The clusters are placed on drying trays from 0 to 40 days, just for the time necessary to complete the entire harvest.
Production technique Organic fertilisation and hand-pruning; shoot-thinning, leaf-pulling, cluster-thinning.
Vinification Performed in steel and concrete vats. Cryomaceration and fermentation, with ambient yeasts, last between 20-25 days. Must and pomace are stirred manually.
Ageing Between 8 and 10 days after drawing-off, the wine is put into French oak barrels, where it passes at least 24 months without any racking. Subsequent aging in bottle for a minimum of 6 months.
