The highest quality research by Fabio Zardetto could not go through the organic world. An authentic wine, produced in a vineyard that is more than 25 years old is conducted according to the principles of organic farming and where the particularly windy climate and altitude play an essential role. Cavalier is the name by which the Venetians call the silkworm. This animal incessantly weaves its cocoon on the branches of the mulberry trees, in the Veneto 'Morèr', trees that are found in abundance as leader of the rows of the vineyard from which the grapes for this intriguing brut.

Bouquet

Rich aroma and freshness citrine herbaceous with nice touches of bread crust. Interesting fruity notes of wild strawberries. Green apple, light pear and citrus scent stand out

Flavour

Mouth is large and tasty, fruity and well balanced. It is full, tasty, clean and long. Good length with soft creamy effervescence in the finish. Sensations of green apple are unleashed
