Vinification |
After harvesting, the grapes are destemmed and gently crushed. Alcoholic fermentation occurs at a controlled temperature in stainless steel tanks with maceration on the skins for about 10-15 days, with frequent pumping-over to encourage optimal extraction of colour, polyphenols and greater complexity. |
Ageing |
9 months in big wooden barrels. |
