The particular position, and the great vegetative-productive balance of the old vines, which were planted in the early 1970s, make it possible to harvest the grapes when they have reached perfect ripeness. The long period of ageing, first in cement tanks in contact with indigenous yeasts and then in the bottle, gives this Verdicchio cru a full-bodied structure and a typical character of its cru.

Colour

Bright, golden yellow with greenish tints.

Bouquet

Bouquet of broom, camomile, ripe apricot, pineapple, and peach, with pleasant overtones of wild mint, sage, and hazelnut.

Flavour

Dry and fresh with an acidity that is perfectly balanced by the softness of the alcohol. Long and tasty finish.

Pairing

Excellent with roast white meat, roasted fish, and stuffed pasta.

Soil composition Very deep, clay loam, fairly fresh, and represents the ideal soil for a vine such as Verdicchio.
Cultivation system Double cordon.
Yield per hectare 6,5 tons.
Harvest The grapes are picked by hand and collected in boxes. The harvest takes place between the first and second ten days in October when the grapes have reached a perfect ripening status. It is fairly common to find a few grapes have been attacked by noble rot.
Fermentation temperature 16 - 18 °C
Fermentation period 10-15 days.
Vinification After a light pressing, the first must is rapidly cooled and then goes through static decantation. Fermentation takes 10-15 days in steel tanks with the temperature maintained between 16°C and 18°C. The wine does not undergo malolactic fermentation, in order to preserve freshness and acidity
Ageing About 10 months, during which the wine remains in contact with its own fermentation yeasts in concrete tanks. Vecchie Vigne Casal di Serra rests in the bottle for several months before being marketed.
