Colour

Bright, vivid ruby red.

Bouquet

Notes of blackberry, delicate violet and rose, small red fruits, and darker notes of date and rust.

Flavour

A fresh wine on the palate with hints of cherry jam, mustard, bergamot, pomegranate, and medlars. The tannins boost the spicy notes with hints of vanilla. It is a full-bodied and dry wine underlying the powerful energy of Mount Etna.

Pairing

Excellent with vegetarian dishes based on wild mushrooms or eggplants. It also pairs with medium-aged cheeses.

Origin	In the villages of Rovittello and Linguaglossa (Catania) on the slopes of Etna.
Cultivation system	Head-training and spurred cordon.
Harvest	Exclusively by hand which takes place at the beginning of October.
Vinification	The destemmed and gently pressed grapes undergo a 24-hour cold maceration followed by a short 7-day maceration. Subsequent maceration with alcoholic fermentation and final spontaneous malolactic fermentation.
Ageing	3 months in 30-hl barrels.
Production year	30,000 bottles
Allergens	Contains sulphites
Pairing	Excellent with vegetarian dishes based on wild mushrooms or eggplants. It also pairs with medium-aged cheeses.
