Tolaini Al Passo 2020
Al Passo is a small circular forest with an interior passage ("al passo") at the highest point of the Tolaini vineyard with a breathtaking view of the towers of Siena, the town of Montalcino and Montepulciano to the east. It was in Al Passo that we discovered and restored an Etruscan tomb and ruins. Distinct aromas of cherry and berry, the palate shows the classic backbone of Sangiovese (85%) with a complement of Merlot (15%). This wine shows a true sense of place.

Colour

Clear, bright ruby-red with a nail tending to garnet with ageing.

Bouquet

Clean with aromas of red fruits, licorice and vanilla, spicy notes of black pepper.

Flavour

Good body with fairly soft tannins, aromas of ripe fruit, vanilla and licorice with a rich and spicy aftertaste.

Vinification Grapes are firstly selected during harvest in the vineyard and then on the sorting table when they arrive to the winery; they are destemmed and the whole berries are immediately put into stainless steel fermentation tanks and a portion into French oak fermenters. Alcoholic fermentation: the temperature is computer controlled in the tanks where the must is kept in contact with the skins for about 20-25 days. Remontage occurs every 6-8 hours and one delestage is done per week. Malolactic fermentation: French oak fermenting tanks and in French oak barriques (20% new and 80% used for one year).
Ageing On fine lees for 6 months in barriques and oak fermenters, 8 months in barriques (20% new).
