Vinification |
Crushing of whole and destemmed grapes. Vinification in red, without temperature control, with long maceration of the wine with the skins and part of the whole bunches without destemming. |
Ageing |
Devatting and racking of the wine into barrels used for malolactic fermentation. After about eight months, the wine is racked into steel tanks. No clarification, only decanting and repeated racking to make the wine naturally clear before bottling. 12 months of bottle ageing. |
Pairing |
Excellent with white and red meat and elaborate fish dishes. |
