Vinification |
Harvesting takes place between the penultimate and last week of October. The grapes are destemmed, crushed and dried to macerate with the skins for at least 15 hours. Fermentation and ageing take place in steel vats. |

In steel vats. Bottling takes place in March following the harvest. |

Excellent in general with fish and shellfish, exceptional with river fish (pike, trout, crayfish, etc.). |
