Vinification Glera and Pinot Nero grapes are gently pressed and destemmed. The pressing is pneumatic under vacuum followed by immediate drainage of the must. For the Pinot Nero, the vinification is in red. The must then settles in statically in a cold environment where fermentation occurs at a low temperature with selected yeast. This process is followed by subsequent series of decanting for natural clarification of the bases. The two wines are finally blended according to the specification.
Ageing Second fermentation in autoclave for 2 months. The fermentation is stopped by chill for ageing and refinement on the noble lees before bottling.
