	Perlage Fine and persistent.
	Colour Pink with a slight coppery nuance.
	Bouquet The nose presents fragrant wild red and orange fruit—raspberry, cranberry, winter cherry, cornel, and sour cherry and heritage apples, flanked by citrusy notes of kumquat and balsam hints of juniper and elderberry.
	Flavour In the mouth, it is dry and persistent, with an excellent structure supported by a good minerality.

Harvest	By hand, with small boxes the first and second decades of August.
Vinification	Cooling, soft pressing of the whole grapes after a short maceration in the press. First fermentation in thermo-conditioned steel tanks at 13-14°C. Each parcel is vinified separately to enhance the uniqueness of its profile.
Ageing	At least 30 months. The second fermentation occurs in May following the harvest.
Allergens	Contains sulphites
