Soil composition	Clay and limestone rich in magnesium and manganese of the Tortonian-Messinian era.
Fermentation temperature	30 °C (86° Fahrenheit)
Fermentation period	10 days.
Vinification	The selected grapes are destemmed and pressed. Maceration lasts about 10 days at a maximum temperature of 30°C. Malolactic fermentation terminates before the end of the winter.
Ageing	At least 18 months in oak casks of different capacities giving a great balance.
Allergens	Contains sulphites
