Crushing, spontaneous fermentation with 70% of the stalks, without temperature control, in oak truncated cone vats, 4 weeks, 2 of which are submerged. |
Ageing |
In truncated cone vats and 10% in small used oak barrels for 25 months, manual bottling without filtration or clarification. |
Pairing |
Red with a strong personality, excellent with grilled meats and aged cheeses. Fantastic with risotto. |
