Soil composition Calcareous soil tending to clayey.
Cultivation system Counter espalier with Guyot breeding.
Harvest First 10 days of August for Chardonnay. Early September for Catarratto.
Vinification Soft pressing of the grapes; static cold decantation of the must. Separation of the clean must and fermentation at controlled temperature with yeasts.
Ageing In barrique first for about a year with frequent batonage and then in tank at low temperatures until bottling.
