This wine is a combination of elegance and complexity. It can be enjoyed as an aperitif or at the beginning of a meal and goes well with white meat.

	Perlage Numerous bubbles, fine and elegant that rise to the surface.
	Colour Pale yellow color.
	Bouquet The nose will appreciate notes of apple, ripe tropical fruit, herbs, strawberry, cedar, black cherry and gooseberry; creamy and mineral.
	Flavour On the palate the taste is full and delicately almond. End of class, a great Champagne long and persistent.

History	Atavique (Atavistic): Atavism: recurrence in the descendant of one or several characteristics typical to one of its ancestors.
Origin	100% Verzy Grand Cru, Grande Montagne de Reims.
Vinification	Natural alcoholic fermentation (natural yeasts). 20% vinified in oak barrels and 80% in small vats. Malolactic fermentation to limit the addition of sulphur.
Ageing	Aged on fine or coarse lees for 6 months in barrels or vats. Aged on racks in our cellars: 32 months on average. Aged in our cellars after disgorgement: 6 months on average.
Residual sugars	3.00 gr/L
Allergens	Contains sulphites
