Vinification |
In January the bunches are pressed and the must obtained is put into chestnut Caratelli, where it remains for at least 4 years, sealed with lime. The Caratelli in the company's Vinsantaia undergo the influences of climate change, passing from the cold of winter to the heat of summer, favouring the fermentation of the vinsanto. |
Ageing |
After 4 years, the vinsanto is transferred to other oak Caratelli where it remains for another 4 years, again sealed. It is then bottled with the waning moon by gravity. |
