Soil composition |
The particularly rich soils, composed of volcanic and mineral sands, give great freshness and flavour to the white wines produced here. |
Cultivation system |
The vines are grown using the Guyot system. |
Vinification |
The grapes are harvested in the early hours of the morning and delivered to the winery in small 10 kg crates. After destemming, the grapes are immediately softly crushed and, after 48 hours of decanting, the must ferments in temperature-controlled stainless steel tanks. |
Ageing |
The wine matures on its fine lees for 12 months in 700-litre French oak tonneaux. During this time, weekly battonage is carried out. A partial malolactic fermentation takes place. |
