Bouquet

Intense notes of plum and cherry sinuously blend with balsamic nuances of mint, tea leaves, dried flowers and gold-leaf tobacco.

Flavour

The balance between the very fine tannic structure and the fresh, menthol reminescent finish, gives depth and elegance to the wine.

Pairing

Vinification	Vinification on skins: eight/ten days fermentation with floating cap followed by twenty/thirty days maceration with submerged cap; daily pumping over. Malolactic fermentation is carried out in full at a controlled temperature after the alcoholic fermentation.
Ageing	In French barriques for 12 months and Slavonian oak casks for twelve more months. Further ageing in the bottle before release.
