A rich and intense red wine on the nose, with hints of ripe berries, black cherry, plum and dark cherry. This is followed by tertiary components of liquorice, resin, graphite and black pepper. It is warm, round and slightly tasty on the palate, guided by an elegant and powerful tannic texture, which contributes to a persistent and brilliant character.

Vinification The freshly harvested grapes arrive at the winery intact. They are quickly crushed and gently destemmed to extract only the noblest and most aromatic fractions from the skin and the outermost area of the berry. Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration lasts 10 days, during which periodic pumping-over takes place so that the must can gather all elements present in the skins and gently extract the colour. Racking occurs only when all the sugar has been transformed into alcohol. Racked into specially made vitrified cement vats with cork insulation, the wine maintains a post-fermentation temperature of about 22°C for a long time. In this way, malolactic fermentation starts and ends spontaneously over the next two months.
Ageing Initially, the wine is aged for two years, partly in 30- and 36-hectoliter Slavonian oak barrels and partly in small, lightly toasted 225-litre French oak barrels. The vineyard regains its unity with blending in traditional large oak barrels and completes its ageing in the bottle before being put on the market. Barolo Coste di Rose reaches maturity 4 years after the harvest, and the ageing period is between 4 and 20 years.
