This is a Passito di Pantelleria from a small production according to nature. A seductive wine, scented and intense, a contemporary interpretation of the “yellow gold” that captivated the Carthaginians when they arrived on the island in 200 B.C.

Bouquet

Aromas of citrus, roses, jasmine and raisins.

Flavour

Full-bodied and round to the palate, with mineral and sweet flavours. Very long and persistent.

Pairing

Perfect at the end of a meal with almond-based desserts and spicy cheeses.

Soil composition	Sandy with a volcanic origin.
Harvest	By hand, the fourth week of August. The grapes are harvested from several districts of the island of Pantelleria: Bukkurham (west), Monastero (south), and Piana di Ghirlanda (east).
Fermentation temperature	16-18 °C
Vinification	Once harvested, a part of the grapes is withered for about 20-22 days, and then the dried grapes are added to the fermenting must from the fresh grapes. The fermentation occurs in steel tanks at 16-18°C.
Ageing	The wine is aged for about 10 months in steel tanks and three months in the bottle.
Allergens	Contains sulphites
Pairing	Perfect at the end of a meal with almond-based desserts and spicy cheeses.
