Vinification	Whole grapes are directly pressed in nitrogen. The resulting must ferments in stainless steel at a temperature of 18-20°C.
Ageing	The wine stays in contact with the lees for then months without racking and the bottling occurs in June. It then undergoes 1-year ageing in the bottle before marketing.
