Vinification |
In white, in a pneumatic press with a soft pressing of the whole grapes using only the first fraction. After static and physical separation of the impurities of the must at low temperatures, the inoculation of selected yeasts takes place for fermentation in stainless steel tanks at a controlled temperature. This is followed by racking and lowering the temperature to about 10°C to avoid malolactic fermentation. Once the liqueur de tirage has been added, the wine is bottled, corked with a crown cap and laid down in a pile for frothing. |
Pairing |
It pairs well with first courses and risottos. It also pairs with tasty and flavoursome dishes, perhaps with poultry seasoning, such as risotto with glazed quail. It is also excellent with white meats, such as veal with sauces. |
