Soft pressing of grapes, fermentation in steel vats and small oak casks at controlled temperature, after which wine is kept in contact with the yeasts by batonnage (stirring). |
Ageing |
Afterwards, the Franciacorta is prepared for the lees ageing with which the second fermentation in the bottle begins for the refinement on the lees for at least 24 months. |

Versatile, it is a fine accompaniment for starters, salami and other cold meats, fish, grilled and roast chicken, guinea fowl, veal and rabbit, stews, and soft cheeses. |
