Soil composition	Sandy-loamy texture with low silt content and good organic substance content. It is an extensive "terraced garden" cultivated with vines with soil at a medium-shallow depth but very heterogeneous due to the strong presence of outcropping mother rock.

Harvest	By hand, in October.
Fermentation temperature	24- 28 °C
Fermentation period	8 days.
Vinification	The grapes are vinified traditionally in temperature-controlled fermenters at 24-28°C for 8 days.
Ageing	After a first passage in steel tanks for six months, the new wine is placed in French oak barrels for 30 months.
