An important name that hides a precise meaning. What's a spark? Where does it come from? What do you remember? The spark is bright red, it is fire, it is heat and above all it is beginning. This wine, in fact, was the first created, completed and then presented by the winery ... the beginning of the dream that gradually consolidates and becomes reality, just like in the most beautiful children's fairy tales. A red wine that combines the classicity of Rosso di Valtellina DOC with a burst of vivacity and youth. And who could capture and underline this youth better than Beatrice, daughter of the winery's owners, who proposed this name?

Colour

Transparent ruby red of medium intensity, but very lively and bright.

Bouquet

Of medium olfactory power, it is characterized by floral-fruity finesse (wild violet and unripe hazelnut) persistent and captivating.

Flavour

On the palate it is expressed with a fabric that is never overbearing but very balanced. Just a little bit pleasantly tannic, with preservable tannins that highlight the specificity of mountain Nebbiolo. Well-balanced in its freshness and flavour.

Pairing

Ideal complement for the traditional dishes of the cuisine of the Valley (pizzoccheri, polenta), for snacks with cold cuts and for all alpine soups.

Harvest The grapes are harvested in plateau on average around mid-October.
Vinification The grapes pass to the press-destemming and, even before the start of fermentation, has a short process of pre-fermentative cold maceration (at + 10 ° C). This is followed by tumultuous fermentation, which is regularly carried out with the cap of floating pomace, which is daily soaked in the must. After only 5-6 days of maceration, the wine is pressed, followed by a first flaking.
Ageing The wine is then aged in small stainless steel tanks where it starts and completes the malolactic fermentation. In June of the following year, the wine is bottled and begins to be sold.
