History |
The intention in producing 'Così sia' was to obtain a simple and straightforward wine that reflected the working methods of past generations. Since this is a very delicate wine that has undergone few treatments in the cellar, fermented without the addition of sulphur dioxide, left a few days in contact with the skins and unfiltered, the company suggests keeping the bottles lying flat in a cool, dry place (12°-15°C), avoiding direct exposure to light. During ageing, the wine may show a deposit, so we recommend placing the bottle upright a few days before consumption or gently serving it if necessary. |

Soil composition |
Composed of prevalent marls and sandstones belonging to the flysch formation of the Eocene epoch, which gives rise to a rocky substratum that transforms to form the typical 'ponca' of this terroir. |

It pairs well with spicy and elaborate first courses, white meat and fish-based main courses, which contrast the softness of the wine. |
