Intense and elegant bouquet expressing complexity, initially with ripe, dried and roasted fruit notes, then with hints of honey, sweet spices, wax and incense.

Flavour

On the palate, it is dry, warm and persistent. It expresses both softness and balance. The long finish is characterised by fresh and savoury notes that support and amplify the aromatic component.

It pairs well with spicy and elaborate first courses, white meat and fish-based main courses, which contrast the softness of the wine.

History The intention in producing 'Così sia' was to obtain a simple and straightforward wine that reflected the working methods of past generations. Since this is a very delicate wine that has undergone few treatments in the cellar, fermented without the addition of sulphur dioxide, left a few days in contact with the skins and unfiltered, the company suggests keeping the bottles lying flat in a cool, dry place (12°-15°C), avoiding direct exposure to light. During ageing, the wine may show a deposit, so we recommend placing the bottle upright a few days before consumption or gently serving it if necessary.

Soil composition Composed of prevalent marls and sandstones belonging to the flysch formation of the Eocene epoch, which gives rise to a rocky substratum that transforms to form the typical 'ponca' of this terroir.
