It is a wine composed of three successive vintages with ageing on the lees in the bottle for at least two and a half years, during which time the bottles are moved and re-stacked in the cellar twice, putting the lees back into suspension and favouring maturation, since they will only go into the bottle after dégorgement à la volée when the producer realises that the wine is ripe to the point.

Vinification After pressing the must is put in traditional oak barrels for fermentation, which begins without the addition of selected yeasts and occurs with weekly battonage during the winter and monthly during the Summer. This process continues naturally without any intervention and sometimes lasts until July. The malolactic fermentation is low, the natural acidity of the wine is not neutralized as fertilizers do not contain minerals and never undergoes any kind of filtration.
