It represents the other excellence of the company's production. The analysis of this pure wine began in 2004 and only after reassuring examples of its longevity and freshness was it decided to start marketing it from the 2013 vintage. It is certainly a modern wine, in line with today's cosmopolitan gastronomic requirements, that knows how to unite undoubted qualities of finesse, elegance and softness with sensations of infinite freshness and drinking pleasure, so much so that it revisits the historical white wine tradition of this area, skilfully redesigning a modern wine geography.

Deep ruby red.

Bouquet

On the nose, it expresses an extravagant complexity with notes of ripe fruit, blackberry, blueberry and myrtle blended with the vegetal and balsamic notes of typical Mediterranean spices to immediately give way to chocolate, coffee and tobacco.

Flavour

Balanced and harmonious pervaded by a pleasant freshness. It warmly envelops the palate of the attentive consumer.

Pairing

It pairs well with braised red meats, stews and game. Moreover, it perfectly pairs with medium to aged cheeses.

Vinification After careful sorting and a gentle de-stemming-crushing of the bunches, alcoholic fermentation follows at a temperature of around 28/30°C with frequent but gentle pumping-over and delestage, with maceration on the skins for about 20/30 days in small, wide and low stainless steel tanks to favour more important liquid/skin contact and the consequent better extraction of both tannins and colouring substances. After racking, the wine is placed in French oak barriques to complete alcoholic fermentation, which is immediately followed by malolactic fermentation. The wine rests for at least 24 months in the wooden containers and is then bottled without any stabilisation or filtration process, where it rests for a further 12 months in the bottle before being marketed.
