	Bouquet Defined proportions between the floral theme of lemon blossom and verbena, and the theme of the bright fruit with notes of mandarin, ginger and crisp green apple. These notes are supported by veins of mint, pepper and salt.

Vinification	Only the first must is destined for Franciacorta EBB. Primary fermentation occurs in small 225-litres oak barrels, which host the wine for five months until the following spring. Blending and bottling with 'liqueur de tirage' preceded stacking for re-fermentation in the bottle.
Ageing	The stacked bottles remain 30 months in the company's 17th-century cellars before 'remouage'. Subsequently disgorged and dosed "Extra Brut", they receive the mushroom cap and cork. At least six months of further ageing are finally required before this Franciacorta is put on the market.
