Soil composition |
Soil types range from the young alluvial soils of Rapaura, Renwick and upper Awatere, which contain high percentages of stones from New Zealand's Greywacke River to the older, denser clays of the southern valleys. |
Cultivation system |
Scott Henry system and Vertical shoot positioning. |
Harvest |
Harvested largely by machine in cool (often cold) night conditions. The sauvignon blanc grapes were collected in half-tonne drums, which were poured directly into the press and lightly pressed. |
Vinification |
The juice obtained was cold-regulated before fermentation in stainless steel, using mainly cultured yeasts for slow and cool fermentation. A part was spontaneously fermented with indigenous yeasts. |
