Harvest |
Four grape harvests are made in succession, in the period from September 20 onwards, with selection of the grapes according to the degree of ripeness and harvest in boxes of the grapes in perfect health condition. |
Vinification |
Fermentation at controlled temperature in steel tanks, with a pre-fermentation and post-fermentation phase of a total of 20-22 days. |
Ageing |
Malolactic fermentation and elevation in large oak barrels and partly in barriques for 4-6 months. 4 months in the bottle. |
Pairing |
It goes very well with cold cuts (ciauscolo, coppa di testa), pasta with meat sauce, roasted meat and fish, fish soups and anchovy stockfish, medium-aged cheeses. |
