Harvest |
End of September, manual with selection of the bunches. The grapes are harvested when fully ripe thanks to the perfect vegetative-productive balance achieved by the vineyard over the years. |
Vinification |
Fermentation takes place in steel at a controlled temperature with maceration for 14 days. This is followed by racking, a short stay in steel and passage into barriques and tonneaux, where malolactic fermentation takes place. |
Ageing |
In wood for 2 years, after blending and subsequent decanting into steel, filtering and bottling take place, followed by a further 12 months ageing in the bottle. |
Pairing |
Ideal with venison chops cooked at a low temperature. |
