Fontanafredda Derthona Timorasso 2020
Horizontal and soft stripes, historical and distinctive traits that characterise the origin, provenance and savoir-faire of Fontanafredda. An ancient grape variety, historically indigenous to the Tortonese hills, Timorasso, now brought back to life by taking the name Derthona. It has a floral charm of great elegance and power, with great minerality.

Golden colour blending with its greenish reflections.

Bouquet

On the nose the bouquet is aromatic and evokes exotic fruits as well as white pulp fruits.

Flavour

In the mouth it is pleasantly fresh, enveloping and harmonious, with a long taste persistence.

Pairing

Served chilled it is a great aperitif and at table it is ideal with fish starters, seafood risotto and, why not, with mature cheeses.

Harvest End of September. The grapes are hand-picked and delivered to the winery in 20 kg crates.
Fermentation temperature 15-17 °C
Fermentation period About 30 days.
Vinification Immediately destemmed and crushed, it is cold macerated for 12 hours at a temperature of 8 °C. At the end of maceration, the grapes are gently pressed and the must, after a period of about 24 hours in the tank, is decanted in order to separate the coarser deposits. Finally, alcoholic fermentation takes place in steel vats for about 30 days at temperatures between 15-17 °C.
Ageing In steel vats for 10 months at a low temperature, keeping it on the fine lees to increase the aromatic complexity and sensation of volume. After cold stabilisation it is bottled.

Pairing Served chilled it is a great aperitif and at table it is ideal with fish starters, seafood risotto and, why not, with mature cheeses.
