It expresses intense and elegant olfactory notes reminiscent of black pepper, meat, ripe berries, dried fruit, black cherries and blackberries and red roses, followed by perceptions of sweet spices such as dark chocolate, cinnamon and liquorice, with an elegant and mineral graphite finish.

Flavour

In the mouth, it combines all these sensations in a perfectly balanced body, confirming the extraordinary, exuberant richness it shows on the nose, with silky tannins perfectly integrated with the wine and pleasant acidity, full and spicy taste of ripe red and black fruits and jam, with mineral nuances and balsamic hints. Very long and unforgettable finish.

Vinification After extremely soft crushing and destemming to leave the grapes intact, alcoholic fermentation takes place spontaneously, thanks to the indigenous yeasts, in temperature-controlled steel tanks for about 15 days. On average, the subsequent maceration of the skins lasts another three to four weeks. Malolactic fermentation involves only the first must, i.e. the wine obtained from pressing the marc is never used for the production of the company's and occurs spontaneously, without inoculation of bacteria.
Ageing This is followed by at least 24 months of ageing on the noble lees in the best French oak barrels from Allier, Nevers and Tronçais.
