The name Oudeis derives from Greek and means No One (Odysseus). It is meant to recognize the terroir of the Langhe as the most relevant cause of the quality of this wine. No person, even with experience, dedication and hard work, can be considered the origin of the complexity that we all seek in wine. Only the terroir has this distinctive trait, and Enrico Serafino recognizes it in the name of its Alta Langa DOCG.

Vinification The grapes are sorted on a vibrating table and cooled before being subjected to soft pressing in an inert environment. Fermentation is exclusively in stainless steel at a controlled temperature.
Ageing This takes place in the historic cellars without light and at a controlled temperature for the time required by the vintage and in any case an average of 42 months. Disgorgement with ice concludes with the dosage of liqueur d'expedition, which is 6-7 g/l of residual sugar for this brut. To preserve the terroir-to-wine ratio in the liqueur d'expedition, no wine distillate such as Cognac or Brandy is ever used.
