Harvest | By hand, with crates. The bunches of grapes undergo tip cutting and thinning in July to ensure their integrity until pressing. |
Wine making | The first fermentation is conducted partly in barriques and partly in steel. The method used for the second fermentation is the classic Trentodoc method. |
Aging | On the lees, it lasts at least 36 months to achieve an otherwise unattainable elegance. The 'dosage' is minimal not to alter the characteristics conferred naturally by very favourable environmental factors, time and particularly careful craftsmanship. |
