From a strict selection of Pinot noir and Chardonnay plots, this extra-brut champagne blends together several vintages and is aged 5 years. With a low dosage, the Ultra D is the alter-ego of the Cuvée D in all its purity. Mineral and saline, you will be astonished by the Ultra D.

	Perlage Fine mousse.
	Colour Gold yellow.
	Bouquet Fresh aromas and superb minerality are revealed with a touch of crisp salinity (iodine notes), moving to white flower and spicy notes.
	Flavour It is wonderfully lively and offers excellent length on the palate.

Pairing

Gruyère gougères with a lime mousse. tagliatelles with scallops, fried scallops with truffled green lentils, oysters marinated with leeks, olive oil and lemon, octopus and risotto, roasted young partridge with thyme and pulp of white beans, fattened chicken, black trumpets and foie gras.
