Bukkuram, from the Arabic 'father of the vine', is the name that defines the area of Pantelleria favoured by the Arabs for cultivating Zibibbo grapes. There, the company's estate extends, in an 18th-century dammuso, for about five hectares of vineyard at 200 m. a.s.l., with southwest exposure.

Vinification It all begins with the drying in the sun of 50% of the grapes for at least 3 weeks in special drying racks bordered by large lava stone walls. The remaining part is left to ripen and half-wither on the vines. In September, the grapes are harvested and vinified. Once fermentation is advanced, the withered grape is added, which is left to macerate for about three months until a balanced ratio between the alcohol component and the residual sugar is obtained, with aromas and perfumes that only this magical island can give.
Ageing 30 months in 225-litre vats. French oak and 6 months in stainless steel.
