The second decade of September. The grapes are harvested and placed in boxes with exclusively manual selection. |
Vinification |
After soft pressing, fermentation follows at a low temperature in temperature-controlled steel tanks. |
Ageing |
This wine does not undergo malolactic fermentation and is bottled after about 6 months of ageing on the lees in steel tanks. This is followed by about 2 months of bottle ageing before marketing. |
Pairing |
Versatile in its pairings. It is excellent with cold meats, sliced meats, light cheeses, grilled meats and pizza. It is also ideal with shellfish, fried anchovies or fried fish. |
