Climate	Altitude: up 200 m. a.s.l. Mediterranean with mild winters, limited rainfall and very hot and windy summers.
Soil composition	Partly alluvial, sandy, slightly clayey and partly of volcanic origin.
Cultivation system	Espalier and head-training.
Yield per hectare	5,000-6,000 kg/hectare.
Harvest	Middle of September.
Vinification	In white, with soft pressing and fermentation in first and second passage tonneaux.
Ageing	In tonneaux for 6 months together with its yeasts with periodic bâtonnage then bottle ageing. Wine increases in complexity over the years.
Allergens	Contains sulphites
Pairing	Important dishes with good structure, rich and flavoursome to try on fregola sarda with seafood and bottarga flakes.
