Sangiovese 88% and Canaiolo 12%, in perfect harmony, a combination that represents the terroir with all its millenary history, the absolute uniqueness of the natural environments transformed over the centuries by the skilful hand of man, the cellar secrets handed down from generation to generation. The 'Capotondo' represents the authentic interpretation of Chianti Classico according to the Premiata Fattoria di Castelvecchi: a balance between fragrance and softness, and between fruit and structure.

Bouquet

The aroma of red fruits prevails, with tendencies towards ripe fruit such as berries, blueberry, cherry and plum, slightly spicy.

Flavour

A wine with good body, acidity and freshness, with prevailing floral notes, and hints of red roses and violets. A wine of great harmony, typical and balanced, with great character.

Pairing

A wine of wide drinkability, excellent throughout a meal and accompanying savoury first courses, baked red meats, chops and medium-aged cheeses.

Vinification The grapes are harvested and carefully selected. Maceration is of medium duration and lasts 25-30 days.
Ageing The wine is then left to mature in steel tanks until December, after which it is transferred to large casks and third or fourth passage barriques for 10-12 months, which allows the tannins to mature. This is followed by refinement in the bottle for 8 months.
