Gran Cuvée comes from a special selection of grapes coming from 20 company crus to represent fully the vocation of the terroir.

Bouquet

A fragrant and intense Franciacorta, with notes of freshly baked bread, white flowers (hawthorn, basswood) pineapple and white peach.

Flavour

A fresh, soft and silky wine with an aftertaste that recalls the sensations perceived by the nose.

Pairing

It is a seductive aperitif and can be served at all meals, with delicate shellfish dishes or shrimp; with swordfish or crustaceans.

Vinification After gentle pressing to extract only the best must, the vinification is carried out with cold techniques, to enhance the aromas and finesse of the wine; with fermentation at temperatures of about 14 °C.
Ageing The “base” wines, after the first fermentation in steel and wood, age for about 8 months at a controlled temperature until the preparation of the cuvée, which is made with a blend of wines aged in steel and barrel (about 10 %). After the second fermentation in bottle, Gran Cuvée ages for at least 30 months before disgorging and is refined for a few other months in bottle.
