Vinification |
After gentle pressing to extract only the best must, the vinification is carried out with cold techniques, to enhance the aromas and finesse of the wine; with fermentation at temperatures of about 14 °C. |
Ageing |
The “base” wines, after the first fermentation in steel and wood, age for about 8 months at a controlled temperature until the preparation of the cuvée, which is made with a blend of wines aged in steel and barrel (about 10 %). After the second fermentation in bottle, Gran Cuvée ages for at least 30 months before disgorging and is refined for a few other months in bottle. |

It is a seductive aperitif and can be served at all meals, with delicate shellfish dishes or shrimp; with swordfish or crustaceans. |
