Vinification |
The grapes are softly pressed and alcoholic fermentation with maceration on the skins takes place at 28°C for about 12 days. |
Ageing |
Once malolactic fermentation has taken place, the wine ages for at least 6 months in large, very fine-grained oak barrels, and then passes into vitrified concrete vats. It ages 6-8 months in the bottle to develop the bouquet. |
Pairing |
It perfectly pairs with fragrant red meat and aged cheeses. |
