Harvest	The grapes are harvested in the early hours of the day during the second deacde of September.
Fermentation temperature	14-16 °C
Vinification	White vinification, soft pressing of the grapes to extract only the best must. Static settling is followed by pure fermentation at a controlled temperature of 14-16°C.
Ageing	The wine then matures on the lees for 3 months. The second fermentation takes place in steel tanks at 13-14°C.
Allergens	Contains sulphites
Pairing	It is ideal as an apéritif and always the perfect match for important moments. It is perfect with refined fish dishes such as pasta with clams and white meats such as orange chicken.
