Harvest |
The grapes are selected from vineyards in the most ventilated and sunny areas to obtain perfectly healthy and ripe berries. The harvest is spilt into two steps to achieve a balance between acidity, in the first, and aromatic and sugary notes in the second. |
Vinification |
The two batches are vinified separately but processed using the same particular method: the cryomaceration process, which consists of a slow and gentle contact between skin and must at very low temperatures to allow a slight transfer of colour until the desired shade is achieved. The process continues with a soft pressing and ends with the completion of fermentation. |
Ageing |
After maturation in steel tanks for a few months, the blend between these two fractions is created to enhance the organoleptic notes. |
Pairing |
Excellent both as an aperitif and during meals. It goes perfectly with fish dishes such as baked salmon fillet. It is also recommended with seafood risotto. |
