Altitude: 300-390 m. a.s.l. Exposure: East-West, South-West. |
Harvest |
By hand, in mid-October. The grapes are placed in perforated baskets for transport to the winery. |
Vinification |
Fermentation occurs in temperature-controlled stainless steel tanks at 28°C with frequent daily pumping-over for 15-20 days. |
Ageing |
The wine is placed in new oak barrels of 25 hectolitres where it stays for 3 years. No filtration is carried out, and the wine is still refined in the bottle. |
Pairing |
It pairs well with main courses of meat, game and aged cheeses. |
