This grape variety is cultivated in the company's vineyards of Cascina Valmenera vineyards. These are called as 'stairway to heaven', as Led Zeppelin sang because the rows are arranged in an amphitheatre shape that seems to rise to the sky.

Harvest	The grapes are harvested by hand into 20-kg crates. Late September-early October.
Fermentation period	15 days.
Vinification	Temperature controlled fermentation for 15 days, then transferred to a tank for malolactic fermentation.
Ageing	Part in barriques which have already been used once, and part in large barrels, for about 8-9 months. Blending in steel for 4-5 months before bottling.
Allergens	Contains sulphites
Pairing	Tajarin with meat sauce, lamb, white meat, game, medium-mature cheeses.
