Allegrini Palazzo della Torre 2020
This is one of the wines that has made Allegrini famous worldwide. The vineyard surrounds 'Villa della Torre', a splendid masterpiece of Renaissance architecture now owned by the family. The winery produces a full-bodied red wine with an ageing potential of at least 10 years. The blend is the historic combination of Corvina, Corvinone and Rondinella with the addition of a small quantity of Sangiovese. A small percentage of the harvested Corvinone is left to dry until December and then added to the previously vinified fresh grapes. The result is a velvety, well-balanced red wine that proffers mature, pulpy fruit.

Ruby red with purple reflections.

Bouquet

It offers light hints of raisins and sophisticated notes of vanilla, black pepper, cloves and cinnamon.

Flavour

Velvety, the tannins are soft and the finish is long and persistent.

Pairing

The 'Palazzo della Torre' easily pairs with various Italian dishes, in particular risottos, especially those flavoured with saffron, porcini mushrooms and pork. Moreover, it pairs with classic dishes such as pasta with Amatriciana and Carbonara sauces, baked lasagna, gnocchi with gorgonzola cheese and walnuts, grilled meats and roasts.

Fermentation period First fermentation for 10 days and second fermentation for about 15 days.
Vinification The crushing and destemming of the fresh grapes are carried out in September. Then, the dried grapes are crushed and destemmed in the second half of December. The fermentation occurs in stainless steel at a controlled temperature.
Ageing Malolactic fermentation is naturally carried out in mid-April in barriques. It then follows the maturation in second-passage French oak barriques for 15 months, mass stabilisation for 2 months and bottle ageing for 7 months.
