Vinification |
Grapes undergo over-ripening in the drying loft for 4 months with a weight loss of 50% of the original weight. Grapes are destemmed and crushed between late January and early February. Fermentation occurs in stainless steel at a controlled temperature. |
Ageing |
5 months in stainless steel, then in wood for 15 months (half in Slavonian oak casks, half in second-passage barriques). The wine finally ages 6 months in the bottle. |
Pairing |
It perfectly pairs with cheeses and chocolate cakes. Traditionally, it is enjoyed with sweets such as shortcrust pastry, cookies and cakes, but it is also an ideal combination with strawberries and many other tropical fruits. |
