||Out of the total 50 hectares of Sangiovese vineyards, only 25 hectares are chosen for growing the grapes destined for making Avi. The vineyards are located in the heart of the community and, indeed, form the original nucleus that the community grew around. The guyot training system keeps the Sangiovese vine’s exuberance under control. Vineyard management operations are all done by the young residents of the community, from pruning to crop thinning (which limits average yield per vine to about 1 kg) to the harvest
||In late September/early October when the grapes are perfectly ripe. Further bunch sorting in the cellar ensures that only the best go on to begin fermentation

||In large 2800-litre barrels more in keeping with Sangiovese’s geographical origins. Long months in the cellar enhance its qualities and its natural, excellent potential. Further bottle ageing for at least 18 months before sale.
